Absorption and digestion of lipids pose special problems. Triglycerides are large molecules, and unlike carbohydrates and proteins, they’re not water-soluble. Because of this, they like to cluster together in large droplets when they’re in a watery environment like the digestive tract. These large fat droplets must be broken down into small droplets. Then, the digestive process will enzymatically break down lipid molecules with enzymes known as lipases. Although the stomach and mouth play some role in this process most of the enzymatic digestion occurs in small intestine. The products of lipid digestion are then absorbed into the bloodstream and carried around. This requires special handling because lipids do not dissolve in water and cannot mix with watery blood.
