Eating carbohydrates triggers the release of feel-good brain chemicals that help us to relax. So when we eat carbohydrate-rich foods (like bread), the end result is that we tend to become more relaxed, sluggish, and even sleepy. In addition to that, bread is also a high glycemic food, and foods that are high on the glycemic index are notorious for causing insulin and blood sugar levels to spike. Now, this rapid rise in blood sugar may initially make you feel more energetic and even happy, but when the sugar leaves your bloodstream, you’ll then soon find yourself feeling very tired due to the dip in blood sugar. “Carbs are the brain’s main source of energy,” says Spano. “When a person cuts down on carbs, the brain is running on fumes, especially as glycogen stores get low and become depleted.” Eventually, once all that glycogen is gone, your body breaks down fat and runs off of little carbon fragments called ketones. The result: bad breath, dry mouth, tiredness, weakness, dizziness, insomnia, nausea, and brain fog. Basically, you feel like you have the flu. Eventually, your body adapts to running on ketones so you don’t feel so bad, but they are still aren’t your body’s preferred fuel source, says Spano. [3]

With a salad, I’m would eating a piece of bread, or I’m would making pasta, replacing most of the noodles (but not all) with green beans. However, after just a week of this pseudo bread-and-pasta-free diet, I had foundad found myself feeling so much better that it quickly turned into a strict bread and pasta ban. Instead, I ateaten more vegetables, fruit, and protein. The results were remarkable.
